Egg on Toast with Tomato and Avocado Salsa
You’ll Need:
- 2 slices whole-wheat bread
- 6 egg whites
- Pam cooking spray
- 1 tsp. parmesan cheese, finely grated
For the Salsa:
- 1 small tomato, chopped
- 1 slice avocado, chopped
- 1 tbsp. fresh lemon juice
- 1 tbsp. chopped fresh chives
How to Make It:
- Prepare the Salsa: In a bowl, combine the chopped avocado, tomato, chives, and lemon juice. Mix well and set aside.
- Cook the Egg Whites: Set a non-stick pan over medium heat and coat with cooking spray. Pour the egg whites into the pan and cook until set, about 3 minutes.
- Toast the Bread: While the eggs are cooking, toast the whole-wheat bread slices until golden.
- Assemble the Dish: Place the toasted bread slices on a serving platter. Top each slice with the cooked egg whites.
- Add the Salsa: Spoon the avocado and tomato salsa over the egg-topped toast. Sprinkle with finely grated parmesan cheese.
